HUNGER FOR THE WILD - Series One

Having cooked pounds and pounds of whitebait in their restaurant, Logan & Brown are keen to try some fresh from the Mokihinui River, but scooping for their own at the river mouth proves a lot harder than it looks. They figure the best way to get a feed is to hold a whitebait cooking competition at the local pub and see how the locals cook this delicacy.

The next day Brownie tries his hand whitebaiting at one of the best stands on the river, which comes complete with pot belly, kitchen sink and refrigerator - everything needed for a great cook up on the riverbank. But he's going to have to do some river time to get his hands on the net.

Time enough for Logie to meet up with DOC ranger Julie Geritzlehner and search for the mysterious adult whitebait. After dark, in a bush covered roadside drain, they come face to face with the endangered Giant Kokopu.

Brownie has had success and with a good kilo of fresh Mokihinui whitebait, he cranks up the coal range and makes a beurre blanc sauce before lightly coating the whitebait in flour and sautéing it in butter. The meal is served on the riverbank with fresh asparagus and a glass of Nautilus Marlborough Pinot Gris.
